Watermelon Gazpacho

There is nothing better in the warm summer months than fresh watermelon. I might actually anticipate this summertime fruit more than summer itself! I love eating it raw but recently have had a blast finding new ways to indulge. I love a cold soup in the heat of summer so this Watermelon Gazpacho is the best of both worlds. It is SO easy. Just put everything in a blender and blend it up. I hope you enjoy this as much as I have!

Ingredients
6 cups seedless watermelon, cubed
1 cucumber, diced
3 heirloom tomatoes, diced
1 red bell pepper, diced
3 cloves garlic, minced
1/2 cup green onions, chopped
1/2 cup fresh basil, chopped
1/4 cup olive oil
salt and pepper to taste
Optional:
1 jalapeno, diced
Instructions
Reserve 1-2 tablespoons of cucumber, tomato, red bell pepper, and basil to garnish.
Add all ingredients to a high power blender. Pulse the blender until desired consistency. I like mine to be a little chunky.
Divide into 4 bowls and top with the reserved vegetables.
