Almond Butter Bites

I have yet to find a person that doesn't love these almond butter bites! I make them at least twice a month and take them to parties, lake weekends, and everything in between. They take almost no time to make and store for up to two weeks (if they last that long) in an airtight container. As with most of my favorite recipes, these bites are super versatile. You can swap out ingredients and use what you already have in your pantry.

Essential Ingredients 1 cup nut butter (I prefer almond) ⅓-½ cup honey 1 teaspoon vanilla extract
Add-Ins ¼ cup chia seeds ½ cup dark chocolate chips ¼-½ cup chopped nuts or seeds ¼ cup freshly ground flax seeds Spices of choice (cinnamon, nutmeg, pumpkin pie spice) ½ cup unsweetened coconut flakes
Assembly 1. Mix the essential ingredients until completely combined. 2. Add all additional ingredients except chocolate chips if using. 3. Lastly, add chocolate chips and mix until just combined. 4. Roll into 1 inch balls and place in the refrigerator or freezer until ready to eat.
