Fresh Chicken Lettuce Wraps

This recipe was one of the most popular from the 2018 Spring Refresh. It is packed with protein and healthy fats and is so easy to make in advance and have for a quick weeknight meal.

Ingredients:

1 head Bibb lettuce

1/2 tablespoon sesame oil

1/2 tablespoon olive oil

1 lb ground chicken

2 cloves garlic, minced

1 onion, diced

1/2 cup Tamari or reduced-sodium soy sauce

1 tablespoon rice wine vinegar

1 teaspoon ground ginger

1 tablespoon Sriracha (optional)

1 can water chestnuts, diced

3 scallions, sliced

Salt + pepper, to taste


Makes 4 servings


Instructions:

  1. Heat oil in a medium saucepan over medium heat. Add chicken and cook until no longer pink, about 5-7 minutes. Drain fat.

  2. Add garlic, onion, Tamari or soy sauce, vinegar, ginger, and Sriracha if using. Stir until fragrant or about 2 minutes.

  3. Add water chestnuts and scallions. Continue stirring until tender and the onions are desired texture. 10 minutes will allow the onions to caramelized. Make sure to stir to keep the chicken from over-cooking.

  4. Spoon approximately 1/4 cup of the chicken filling into lettuce cups. Add salt and pepper to taste.

  5. Enjoy!

Note: The filling can be made up to 3 days in advance. The flavors intensify if it is made a few days before eating.
