Spring rainbow slaw with lemon ginger vinaigrette

I love a big green salad almost all the time, but sometimes we all need a little variety in our routine. I created this Rainbow Slaw for my husband when he was tired of spinach, kale, arugula, repeat... It took a few tries to get it just right, but now we have it every other week!


As always, if you don't have a certain ingredients - no worries! Many any veggie or nut substitutions.

Spring Rainbow Slaw with Lemon Ginger Vinaigrette


Ingredients

1/2 head red cabbage

1/2 cup carrots, grated

1/4 cup green onions, chopped

1/2 cup broccoli, shaved

1/4 cup pepitas

2 tablespoons olive oil

1/4 cup sunflower seeds

1 cup bell peppers, sliced

1 cup parsley, chopped

Lemon Ginger Vinaigrette Ingredients

1 tablespoons minced ginger

2 cloves garlic minced

1/4 cup coconut aminos

1 teaspoon sesame oil

1/4 cup rice wine vinegar

Instructions

1. Combine all salad ingredients in a large bowl. Mix to combine.

2. Combine the lemon ginger vinaigrette ingredients in a jar with a lid. Shake to combine and drizzle over the salad.

3. Enjoy!
