St. Patrick's day pineapple mint mojito

Happy St. Patrick's Day!! I love a themed cocktail and this one does not disappoint. It does have some sugar in it so it is meant to be enjoyed in moderation. I was inspired by this recipe from Bon Appetite.

Ingredients

1/2 cup sugar of choice (I use coconut)

1 cup water

1 cup mint + 1/2 cup

1 medium pineapple, peeled, diced

Rum

Limes

Instructions

1. Bring water and sugar mixture to a boil. Stir until all sugar is dissolved. Remove from heat and add 1 cup mint. Let cool completely.

2. Puree 1.5 cups pineapple in a blender or food processor. Once simple sugar mixture is completely cooled, add to the blender and pulse until combined.

3. To make 1 cocktail, muddle 2 tablespoons pineapple, 2 tablespoons mint, and the juice of 1 lime in a cocktail shaker. Add 2 ounces pineapple puree and 2 ounces rum. Shake for 30 seconds.

4. Garnish with mint and lime. Enjoy!
