Veggie Spring Rolls

I love spring rolls! But they can be intimidating to make. Rice paper can be tricky but definitely gets easier with practice. The great thing about this recipe is you can use whatever you have on hand. No need to go to the store to get exactly what it calls for. As long as you have spring rolls and some veggies, you're all set! I do recommend using some fresh herbs for extra delicious flavor.
Some of the "superfoods" I included are:
Red Bell Peppers have extremely high amounts of vitamin C & vitamin A. 1 medium red bell pepper has 2.5 times your daily vitamin C needs! They are also high in the antioxidants, carotenoids, that protect against heart disease and other chronic illnesses. The lutein found in red bell peppers is great for eye health.
Carrots are another vitamin A superpower that help to protect our eyes. They are also high in the antioxidants – beta carotene, vitamin C, lycopene, lutein, zeaxanthin.
Basil has high levels of magnesium, vitamin K, and manganese. It also anti-microbial properties which means it can help to fight infections. Basil also acts as an adaptogen that can help our bodies adapt to stress.
Cilantro is a great herb to add tons of flavor without added calories. It is also a good source of dietary fiber, vitamin A, and vitamin K.

Ingredients:
12 8.5 or 12 inch spring roll wrappers
2 tablespoons olive oil
1 medium onion, sliced
1 red bell pepper, sliced into strips
1 cup shredded carrots
1 cup bean sprouts
1 cup sugar snap peas
½ cup scallions
Fresh basil
Fresh cilantro
Sesame seeds
Tamari
Instructions:
Caramelize the onions by placing in a pan with olive oil over medium heat. Add water if onions start to dry out or stick to the bottom of the pan. Continue cooking for up to 30 minutes or desired doneness.
Once the onions are cooked, it is time to assemble the spring rolls. Dip one wrapper in warm water for 10 seconds. Place it on a damp cutting board. Fill the lower third of the wrapper with desired filling being sure to leave at least a 1 inch border around the entire wrapper. Fold the sides over the filling first. Then tightly roll from the bottom.
