Very Berry Spinach Salad with Maple poppy dressing

This refreshing salad is perfect for Memorial weekend! Besides being red, white, and blue (#USA), it is so easy to throw together and tastes delish. On a weekend known for indulgence, this salad is a great light and tasty addition.
The Low Down
Packed with fiber from the spinach, berries, and poppy seeds that will help keep you full and promotes digestive health
Loads of healthy fats from nuts and avocado that support brain health and fight inflammation
ALL (many) of the vitamins and minerals are found in almost every component of this dish - spinach, berries, nuts, seeds, avocado, olive oil

Serves 3
Ingredients
6 cups spinach
1 cup strawberries, chopped
1 cup blueberries
1 avocado, diced
1/2 cup pecans
1/2 red onion, thinly sliced
Optional: feta cheese or non-dairy cheese of choice
Maple Poppy Dressing
3 tablespoons pure maple syrup
1 tablespoon olive oil
1 tablespoon apple cider vinegar
1 tablespoon poppy seeds
pinch salt
Instructions:
1. Combine all salad ingredients in a large bowl. Toss to combine.
2. Combine all dressing ingredients in a bowl or mason jar. Whisk or shake to combine.
3. When ready to serve, drizzle the dressing over the salad and toss to combine.
4. Enjoy!
*To make this an entree, add a protein source like a boiled egg, beans, salmon, shrimp, or chicken.
