Very Berry Spinach Salad with Maple poppy dressing

This refreshing salad is perfect for Memorial weekend! Besides being red, white, and blue (#USA), it is so easy to throw together and tastes delish. On a weekend known for indulgence, this salad is a great light and tasty addition.


The Low Down

  • Packed with fiber from the spinach, berries, and poppy seeds that will help keep you full and promotes digestive health

  • ALL (many) of the vitamins and minerals are found in almost every component of this dish - spinach, berries, nuts, seeds, avocado, olive oil

Serves 3

Ingredients

6 cups spinach

1 cup strawberries, chopped

1 cup blueberries

1 avocado, diced

1/2 cup pecans

1/2 red onion, thinly sliced

Optional: feta cheese or non-dairy cheese of choice

Maple Poppy Dressing

3 tablespoons pure maple syrup

1 tablespoon olive oil

1 tablespoon apple cider vinegar

1 tablespoon poppy seeds

pinch salt


Instructions:

1. Combine all salad ingredients in a large bowl. Toss to combine.

2. Combine all dressing ingredients in a bowl or mason jar. Whisk or shake to combine.

3. When ready to serve, drizzle the dressing over the salad and toss to combine.

4. Enjoy!


*To make this an entree, add a protein source like a boiled egg, beans, salmon, shrimp, or chicken.
